Can you drink one single wine throughout an entire meal ?

Yes you can, but it's better to build the menu around the wine, and not the opposite. When you select the wine, you have to analyze its structure and its balance. And then choose a dish which goes in that same direction.


Are there dishes which are impossible to pair with wine ?

Yes - eggs, scrambled eggs of all kinds have always been a problem for me. As have been egg-based products. However, mayonnaise, which is substantial enough to be able to take a little verticality and structure can go with a white wine, a Burgundy or Loire white.
