Testimonial from Jean-Pierre Giraud, Marketing Director at Chêne et Cie. Naturally, warmth and friendship drew us together at first, and the professional side came afterwards. We are both insatiably curious and eager to know more about each other’s field. Olivier shared with me his interest in the world of barrel-making, which is so important in the aging of great wines. I myself wanted to better understand the world of sommellerie at the highest level, gain insight into tasting from a truly great professional and generally share in Olivier’s knowledge. For me, Olivier is a walking encyclopedia of wine. It was only natural that we got to know each other and decided to work together. This was decisive for all the Chêne & Cie brands. For quality reasons, we purchase our wood very much in advance – 1 year for selection and purchasing, 2 to 3 years, and sometimes as much as 5 years, for ageing. It then takes 1 year to make the barrels and sell them in both hemispheres … and again 1 or 2 more years for the wine to make it to the market. This means a cycle of 6 years – at the minimum – between the purchase of the wood and the marketing of the wine. It is therefore extremely important that we have a good understanding of tomorrow’s wines – the trends, the blends, the varietals, the styles, the orientations of the great professionals like Olivier – so that we make the right choices today…. in selecting our oak woods in order to provide our clients with the barrels they need. The path we have chose to attain and maintain excellence is to have the very best knowledge of all the steps involved in the making of great wines.
